North East Indian style Pork with Tomatoes

With the arrival of Indian summers, the scorching heat when the temperatures are above 30 degree Celsius and your appetite slows down. There will be these bouts of hunger when you crave for a light and easy to cook meals. We would never let summers pass without eating meat or fish with sour vegetables, fruits. I can run a cooking marathon if I start cooking will out like a season and Pork with tomatoes is one of the best summer lazy to cook dishes. 

INGREDIENTS:
1.      Pork (1/2 kg) cubes
2.      Tomato (1/2 kg) sliced
3.      2 medium onions finely chopped
4.      10 Green chilies slit
5.      Salt to taste 

 
Gahori Tomato
Preparation:
1.      In a pan, add the pork cubes with salt when hot and cook it over a low flame for 10mins.
2.      Stir it well, cover it again for 10 mins until the water from the meat has dried and the fat starts melting. Ensure that the meat has turned golden brown
3.      Now add the onions and green chilies and fry it in an open pan on a high flame for 5 to 10mins.
4.      Now lower the flame and add the tomatoes, cover the pan with the lid for 10 mins until the tomatoes are cooked.
5.      Add ½ liter of water and stir it until you achieve the consistency of your choice
Serve with steamed rice.

You can replace pork with chicken. For chicken, just add 1tsp oil before frying and the process remains the same.
