Although Yongchak eromba holds the epitome when it comes to Manipuri eromba or fermented dried fish dishes, you should try out Belendri or Lady's finger eromba. The dish is super delicious and healthy with boiled ladies finger or okra, we add boiled potatoes to bind the former and eromba adds a superlative flavour, which will make you go slurp! This recipe might even change perspective about ladies finger recipes when we try only the fried versions so please try it out and share it with your family and friends. INGREDIENTS
1.    Lady’s finger 250grams chop the ends off
2.    Potato 2 medium peel and chopped into halves
3.    Fermented dried fish 2 to 3
4.    Salt as per taste
5.    Ghost chili 1 fresh
Manipuri Style Mashed Ladies Finger
PREPARATION
1.    First boil your potatoes with water for 10 mins in a deep pot.
2.    Now add your ladies finger into the pot of boiling water along with the potatoes and boil them further for 10 mins or until your potatoes are cook.
3.    Drain the water and transfer the vegetables into a large bowl.
4.    Now take your mortar, add the fresh ghost chilies and salt, pound them together.
5.    Then roast your fermented dried fish over fire or charcoal and put them in the mortar.
6.    Pound the roasted fermented dried fish with the ghost chili and salt.
7.    Now add your mustard green, gently stir, cover and cook for 2 to 3 minutes on a low flame, then turn off the stove and let it rest for 10 minutes. This into a fine paste and put them in the boiled vegetables bowl. You can adjust the salt if required.
8.    Finally mix them all together until smooth.
