Wahan Mosdeng |
Wahan Mosdeng is a
traditional pork chutney or salad from Tripura, which is an easy and enticing
recipe. As you bite into the juicy pork fat - the flavour from the roasted
green chillies grooves you into a true culinary romance. I am sure that you are
going to be blown away by this Tripuri pork recipe just like me.
INGREDIENTS
1.
Pork 250 grams
2.
Potatoes 3 large
chopped into halves

Onions 2 small
finely sliced
4.
Ginger 2 inches julienne
5.
Green chili 5 to
10
6.
Salt as per taste
7.
Culantro leaves 8
to 10 finely chopped
PREPARATION
1.
Take your pressure
cooker then add your pork pieces, ginger (add only half for now), salt as per
taste and water – pressure cook it for 4 to 5 whistles and let the pressure
release by itself. Once cool, drain the water and chop the pork into small pieces
and then transfer into a large bowl.

Now puncture your
green chilies and roast them over fire. Once done, roughly pound the roasted
green chillies with your remaining ginger in a mortar. Transfer them into the boiled
meat bowl.
3.
Finally add your
finely sliced onions and chopped culantro leaves into the meat bowl. Also, do adjust
the salt.
4.
Now mix them well
to ensure that the condiments are infused and your Tiprasa style pork salad
still is ready!
