Dohjem - A Khasi delicacy from North East India |
Dohjem is a mouthwatering pork delicacy
of the Khasi tribe from North East India. The recipe is exotic and prepared
with pig innards however since the ham shops in my area does not sell them, I
decided to prepare this yummy dish with regular pork. The meat is ultra-tender
and utterly delicious, and the sesame seeds paste have added a deeper and
nuttier flavour taste while the fragrance from the bay leaf peeps out
flawlessly. I hope you enjoy this North East Indian style pork recipe and

INGREDIENTS
1.
Pork 500 grams
2.
Sesame seeds 50grams
3.
Salt to taste
4.
Dry Red chilies 8 to 10
5.
Ginger 1 inch pounded
6.
Garlic 10 cloves pounded
7.
Turmeric powder 1/3rd teaspoon
8.
Oil 1 tablespoon
9.
Bay leaf 2 to 3
PREPARATION
1.
Dry roast the
sesame seeds for 2 -3 minutes to bring out its flavor on a medium flame
stirring continuously. Then pound it with some water until it turns into a
smooth paste.

Heat oil in a pan
and in the meantime, burn the tips of your bay leaves on your stove and put
them in your pan. This helps in enhancing the flavour of the bay leaves.

Add the turmeric
powder and saute it on a low flame for a minute.
4.
Add the pounded ginger,
garlic cloves and sesame seeds paste – stir and cook them for a minute.
5.
Add the pork
pieces or innards and a pinch salt to taste – stir frequently and open cook it
for 15 minutes.
Tip:
We do not add the salt at the beginning since the dish is tricky when it comes
to seasoning, which we don not want to mess it up until we achieve a certain
level of expertise so we will adjust it later.
6.
Now add 3 cups of
water – stir cover and cook it for 30 to 40 minutes on a medium flame occasionally
stirring in between.
7.
We should now open cook until the water from the Dohjem completely
dries.
