Galda Gilsi Wak Pura | Traditional Garo Pork Recipe with Dried Rosella Leaves

Wak Pura Garo style
 Galda gilsi Wak pura or Pork with dried roselle leaves and rice flour is a simple and quick pork recipe of the Garo tribe in North East India. The meat pair well with the dried roselle leaves giving it a wonderful flavour to the rice flour gravy. The roselle leaves adds as beautiful flavor and tanginess to the dish. The dish goes well with steamed rice and fried potatoes.

INGREDIENTS
1.    Pork 500 grams
2.    Green chilies 10 to 15 slit
3.    Rice flour 3 tablespoons – mix it with water and make a paste
4.    Roselle leaves 2 teaspoons
5.    Salt as per taste

Pork with Dried Roselle leaves
PREPARATION
1.    Take a deep pan, add your pork and slit green chilies- Stir it well, cover and cook it for 20 minutes on a low flame and ensure that you occasionally stir in between until the water from the pork is almost dried.
2.    Now add your dried roselle leaves Installed as per taste stir it well and cook it for 5 minutes.
3.     Now add 2 cups of water and cook it for 20 minutes.
4.     Finally add your rice flour paste - stir it continuously to ensure that there are no lumps and open cook it for 5 minutes.
5.     The rice flour will help the gravy to thicken and once it’s achieves a consistency of your choice, it’s ready to be served!
