Spicy Pig Trotters
Pig trotters are one of the most delicious parts on pig and are quite a delicacy in North East India. This pig trotter dish is specialty at home and requires patience and all that wait will be worth it, once you dig into that rich collagen loaded with juicy and flavourful ingredients which we are going to add to the dish.

I believe trotters recipes should be home-cooked considering the cleanliness of the part of meat we are cooking so ensure that you burn, brush, wash or whatever to ensure that they are super clean. As trotters are one of the most frequently and we prefer them considering they are one pot recipes, which are non-fussy, healthy and loaded with rich yumminess when we literally bite into them with the juices oozing out.

Ingredients for our Pig Feet Recipe
Ingredients
1.    Pig feet or trotters
2.    Dried red chilies
3.    Onions
4.    Salt to taste
5.    Turmeric powder
6.    Ginger
7.    Garlic
8.    Oil

Preparation:
1.    First soak your dried red chilies in water for 30 minutes or more.
2.    Now take your grinder, add your onions, soaked dried red chilies, ginger, garlic cloves and little water- pound them into a fine paste and keep aside.
3.    Heat oil in a pan, once hot add the pig trotters, turmeric powder and salt to taste – stir, cover and cook it for 15 minutes on a low flame.
4.    Add your pounded condiments into your pot - stir them well smearing the pig trotters well then open cook it for 10 minutes by frequently stirring on low flame. Allow your condiments to be well cooked so that it does not have a strong of the onions. You will also observe that the oil from the meat will begin to separate.
5.    Add around 1 liter of water - stir cover and cook it for 2hours or alternately you can use pressure cooker and whistle up to 15 to 20 times.
6.    Once the trotters are tender, you need to open cook until the gravy thickens.
