Fish with Banana Stems | Posola Maas

Assamese recipe- Posola maas
Banana stems with Fish is a classic dish usually cooked when the plant no longer can yield fruit and chopped down to plant new ones. The dish is amazing and basically served as sides, it’s subtle and the flavours of all the ingredients gets beautifully absorbed into the tiny air pockets. The texture of the banana stems is juicy and crunchy and the fish gets perfectly cooked with the addition of water in the end. You can serve it with steamed rice and dal.

INGREDIENTS:
Banana stems – 400gm
Fish- 4 medium pieces
Oil – 3 tbsp
Ginger-Garlic paste – 1/2 tsp
Green chilies – 5 slit
Onion – 1 medium sliced
Mustard seeds - pinch
Turmeric powder– 1/3 tsp
Salt- As per taste


PREPARATION
1.    Peel the banana stems until you reach its tender core; now chop them into roundels and soak in salted water for 30minutes. Take them off the water and finely chop them and soak it again for 30 minutes. Rinse it multiple times so that the salt from the vegetable is washed away.
2.    Marinate the fish with salt and turmeric.
3.    Heat 3 tbsp oil in a pan and lightly fry them for 2 minutes on both sides, take them off the pan and keep it aside.
4.    Now in the same pan add a pinch of mustard seeds and let it splutter; then add the onions and green chilies, fry this until golden brown on a low flame.
5.    Add the ginger-garlic paste, turmeric powder and salt into the pan. Stir well and fry this for a minute.
6.    Add the banana stems and mix them well with the other ingredients, cover and cook this for 15 minutes occasionally stirring in between. Add 2Tbsps water, cook it until the banana stems are cooked
7.    Finally add the fried fish pieces and gently stir the dish for a minute then add half a cup of lukewarm water and cook it for another 5minutes on a medium flame until the water is reduced.
