Bai | Mizo style Vegetarian stew

Bai is a deliciously comforting healthy recipe from Mizoram and this is a vegetarian version. It’s a simple traditional Mizo style stew with loads of vegetables and cooked rice. It not just yummy but perfect for people of any age group and I am sure you will love it too.
Bai - Mizo style Vegetarian stew
INGREDIENTS
1.    Potato 1 large chopped into halves
2.    Ginger 1inch finely chopped
3.    Garlic 4 to 5 cloves crushed
4.    Green Chilies 4-5slit
5.    Lady’s Finger 150grams
6.    Cabbage 100grams roughly chopped
7.    French Beans 100grams
8.    Lard or Butter 1tsp
9.    Khar 3tbs Or Sodium Bicarbonate ½ tsp
10.Rice 1cup cooked
11.Salt as per taste
12.Fermented soya beans ½ tsp

PREPARATION
1.    Add 5 cups of water in a deep pan on a medium flame. once the water starts boiling, we should add vegetables that takes longer time to cook so add your potatoes, French beans and cabbage – cover and for 10 minutes
2.    Now add the green chilies, Ginger, crushed garlic cloves, fermented soya beans, pork lard or butter, khar or sodium bicarbonate and salt as per taste– stir, open cook it for 10mins.
3.    Check if the potatoes are cooked by pressing it and once done, add the cooked rice and lady’s finger. Stir and cook it on a medium flame for 10mins or until the vegetables are done and the stew achieves a consistency of your choice.
