Moringa leaves with duck eggs 
Moringa leaves with duck eggs is super simple recipe and this is the way we prepare at home. In North East India, we have different variations of moringa, stir fry, gravy with meat, fish and eggs and this side dish is a perfect example of two super foods coming together and making it exotic. The leaves are tender, garlicky and eggs have a beautiful velvety texture so do try out this superfood and let me know what you think about it in your comments.

INGREDIENTS
1.      Moringa Leaves 500grams
2.      Duck Eggs 3 large
3.      Cumin Seeds 1/4th tea spoon
4.      Oil 3 tablespoon
5.      Dried Red Chilies 2 to 3
6.      Garlic 5 to 8 cloves
7.      Salt as per taste

PREPARATION
1.     Put oil in a pan, once hot and your finely chopped garlic - stir fry it for a minute on the low flame.
2.      Now are your cumin seeds and dried red chilies - lightly temper them for 10 seconds.
3.      Then add your moringa leaves and salt as per taste – stir, cover and cook it on the low flame until the leaves becomes flaccid, which should take about 5 to 8 minutes. Now you must open cook stirring continuously until it becomes completely dried.
4.      Finally crack the duck eggs and mix them with the leaves cook them together until they are completely cooked.
