Spinach Salad |
By the time it’s mid-week, I am so tired and impatient post office that only fresh juice, fruits and a nap helps. No recipes would even flow into my head and to escape cooking, I’d rather not eat. But hunger prangs are too difficult to control and eating junk is out of question. I rather prepare this salad to keep me going for the night until the next day’s breakfast, which only requires tossing up a few things in a bowl, limited cooking and jazzing up my dinner. This salad is easy and goes well with any meal as well.
INGREDIENTS

Spinach
·
Cherry tomatoes
·
Cottage cheese
·
Salt to taste
·
1tsp olive oil
PREPARATION
1. Wash
the spinach thoroughly in running water, then add the olive oil and spinach in
a shallow pan and cook for 3mins in a low flame
2. Toss
the tomatoes, cottage cheese and salt in a bowl
3. Finally
mix the two and plate.
