Crunchy Summer Salad |
The crunchiness
of green lettuce works particularly well in this salad. It's nice to have with
ingredients if you find it a bit bland, pump it up by adding finely chopped
green chilies. I make this several times a week for lunch and dinner with one
variation or the other and it goes extremely well for buffet. Colorful; easy to
make and relatively healthy (minus as much oil as possible). Can also be served
with lamb, salmon and cheese. But always keep it simple!
Ingredients
1. Cucumber
2. Tomatoes
3. Lettuce
4. Carrots
5. Olive
oil
6. Black
pepper
7. Salt
to taste
8. Lemon
juice
Preparation
1. In
a bowl, chop lettuce, tomatoes, carrot and cucumber.
2. For
the dressing, add olive oil, salt, black pepper, lemon juice and a pinch of
sugar.
3. Now
pour this dressing into the bowl and toss well.
