This was delicious!!! The
piece of chicken on their own was super yummy and serves well with any kind of
rice. Will make again and again... Oh yeah, oyster sauce as I imagined worked
wonderfully giving the dish a sweet flavor to it. The chicken is very lightly
coated with the corn flour just to give it a crunch. I loved the smell of burnt
dry red chilies over the chicken….
Pepper Chicken |
INGREDIENTS
1.
Chicken -300gms
2.
Corn flour 2tbsp
3.
Salt as per taste
4.
Sesame Oil 3tbsp
5.
Dry red chilies
about 8
6.
Ginger about 1tsp
julienne
7.
Oyster sauce 3tsp
8.
Soya(light) sauce
1 tsp
9.
Onion 1small
10.Green
onions or stalks
PREPARATION
1.
Coat the chicken
pieces with cornstarch and set aside.
2.
Heat the
vegetable oil in a wok over high heat. Add the chicken pieces; cook until
golden brown and no longer pink on the inside for about 15 minutes.
3.
Reduce the heat
to low by moving the chicken pieces around the work creating an empty space in
between like a crater. Oil from the chicken will seep to the bottom of the wok.
4.
Stir in the dry
chilies, ginger, and green onion. Cook and stir until the onion is limp and the
ginger begins to brown, about 1 minute.
5.
Finally add in
the pour in the oyster and soya sauces dissolve into the chicken and toss them
on a medium flame.
6.
Add chopped green
onions for garnishing.
