North East style Chicken fry |
A simple fried chicken
recipe, the taste of an odd combination - bitter and sour. The
flavour of which comes from the two main ingredients - dried Roselle leaves and
dried Jute leaves, which are used in small quantities ensuring that they do not
over-power the dish and balanced.

Ingredients for chicken fry |
1. Chicken
– ½ kg
2. Onions-
1 large sliced
3. Green
chilies- 8 to 10 slit
4. Ginger-garlic
paste – 1 tsp.
5. Salt
as per taste
6. Oil
– 1 tbsp.
7. Cumin
powder- ½ tsp.
8. Turmeric-
½ tsp.
9. Dried
Jute leaves – 4 tsp.
10. Dried
Roselle leaves – 2 tsp
11. Lemon- 1
small
PREPARATION
1. Heat
the oil in a pan. Once hot, add the onions and green chilies. Fry themuntil
golden brown.
2. Now
add the chicken, turmeric powder, ginger -garlic paste, salt and squeeze half
of the lime. Mix it well and cover this and cook it on a low flame for 20
minutes; stir occasionally in between and cook this until the water from the
meat is dried and oil starts separating.
3. Open
cook this for couple of minutes, then add our main ingredients – dried Roselle
and dried Jute leaves and keep frying this 5 minutes.
4. Finally
squeeze in the other half of lemon and cook it for 2-3 minutes.
