Ethnic Karbi Tribe's Pork with sesame seeds recipe
Hen-up Phak-ok Lapen Nempo is a traditional Karbi tribe’s ethnic recipe, which is prepared with Pork, sesame seeds and bamboo shoots. Wow is the only word I have for this dish since it has every North Eastern's favourite ingredients. The slow cooking makes the pork juicy, tender, divine and as you dig in the earthy flavour of the sesame seeds pumps it up to the next level while the bamboo shoots adds a distinctive savoury flavour to this super easy recipe from North East India.

Northeast Indian Pork recipe
INGREDIENTS
1.    Pork 300 grams medium pieces
2.    Bamboo Shoots paste 2 teaspoons
3.    Sesame seeds 3 teaspoons
4.    Onion 1 medium sliced
5.    Ginger Garlic paste 2 ½ teaspoons
6.    Fresh or Dried Red chili 6 to 10
7.    Salt as per taste
8.    Fresh Coriander leaves (optional)


PREPARATION
1.    First lightly roast your sesame seeds over a low flame for couple of mins. Then pound it into a fine paste and keep aside.
2.    Take a heavy bottomed pan and add your pork pieces, sliced onions, ginger-garlic paste (2 teaspoons) and salt as per taste – stir them well, cover and cook it for 20 minutes.
3.    In the meantime, we will boil our red chilies then roughly pound them in a mortar into a rough paste.
4.    Now after 20 minutes, we will add our red chili paste – stir, cover and cook it for 40 minutes on a low flame occasionally stir in between.
5.    Once the pork is cooked, we will add our sesame seeds paste, bamboo shoots paste and ½ teaspoon of ginger garlic paste - stir them together and let it cook for 5 minutes.
6.    Finally garnish with fresh coriander leaves, if desired.
