Spicy Chicken with roasted Tomatoes
Roasted or grilled tomatoes are widely used throughout North East India with the various combinations with vegetables, meat and fish. This Northeast Indian chicken with roasted tomatoes recipe is absolutely delicious, healthy and has great flavours. The chicken is ultra-tender, juicy and spicy. Tomatoes when roasted or grilled gets and deep intense flavour, which is really easy to prepare.  and adds a twist to this dish and a kick to the regular chicken potatoes dish.
Ingredients for Spicy Chicken with roasted Tomatoes

INGREDIENTS
1.    Chicken 400 grams
2.    Tomato 2 small
3.    Potato 2 peeled and chopped into halves
4.    Green chilli 3
5.    Dried red chilli 10
6.    Salt as per taste 
7.    Garlic 12 pods
8.    Ginger 1 inch
9.    Oil
10.Chives finely chopped ½ cup finely chopped
 
North East Indian Chicken with Tomatoes
PREPARATION
1.    Take your tomatoes and grill them over fire or stove and once done do not peel the skin just keep aside.
2.    Then grill the dried red chilies and keep aside.
3.    Now take your mortar or grinder, add your green chili, garlic cloves, ginger and grilled dried chilies into a rough paste.
4.    Heat oil in your pan, add your chives and lightly fry on a medium flame for a minute.
5.    Add your chicken pieces, potatoes and your chili- ginger - garlic paste - stir it well, cover cook it for 20 minutes occasionally stir in between.
6.    Add your grilled tomatoes and salt, we will have to open cook the dish stirring gently until the water has completely dried. Also simultaneously break your tomatoes with your ladle so that the water from the fruit gets released.
7.    Now add 1 cup of water- stir, cover and cook it for 20 minutes post which you can open cook until the gravy achieves your desired consistency.
