Bodo pork with Potato Recipe
Oma Gwran Aloo Jwng is a classic recipe of the Bodo tribe from North East India, where the smoked pork is cooked with potatoes. I am sure with this impressive recipe, you will love this smoked pork- potato combination to experience what comforting feels to new height. The tender pork is packed with flavours and the smokiness is to die for. The potatoes add a comforting mushy touch and the gravy is delectable perfect for any of your months during the cooler months.

INGREDIENTS
1.    Smoked Pork 500 grams
2.    Potatoes 4 medium, skinned and chopped into halves
3.    Onion 1 medium finely chopped
4.    Green chilies 5 to 7 slit
5.    Garlic 2 teaspoon
6.    Ginger ½ teaspoon
7.    Bay leaf 2
8.    Oil 5 tablespoon
9.    Turmeric powder ½ teaspoon
10.Salt as per taste
11.Fresh Coriander leaves – finely chopped for garnishing

PREPARATION
1.    Heat oil in a pan, add your bay leaf to temper the oil for 30seconds on a medium flame.
2.    Then add your slit green chilies, onion, ginger paste, turmeric powder and salt as per taste – stir them well and open cook them until the onions are cooked, which should take about 5mins on a low flame.
3.    Now add your smoked pork pieces and potato halves– open cook on high flame for 5 minutes stirring continuously.
4.    Add 2 cups of water – Stir, cover and cook it for 30 to 45 minutes on low flame.
5.    Now take out couple of your potato halves from your pan, then mash them with the back of your ladle and put them back into your pan. This is basically to thicken the gravy. So, stir your dish and cook it for 5 minutes or until the gravy achieves your desired consistency.
6.    Finally add your fresh coriander leaves and give it a quick stir.
