Bodo Style Chicken with Sesame seeds
Dauu Sibing is a terrific chicken with sesame seeds paste recipe and like most tribes across North East India, the Bodo tribe also has this traditional dish. There are slight variations in the recipes amongst he tribes due to the availability of ingredients in their locality and even till date, we follow the same rule. The recipe is easy, which is prepared with minimal condiments and probably the best dish to try out if you have not yet cooked sesame seeds before. The chicken is superlatively tender and juicy, which has soaked the early flavours from the sesame seeds. The gravy is comforting, savory and the aroma makes the dish is irresistibly good that will truly satisfy your craving for comfort food.

INGREDIENTS
1.    Chicken 500 grams
2.    Onion paste 1 medium
3.    Ginger Garlic paste 1 ½ teaspoon
4.    Green Chili 4 to 5 slit
5.    Turmeric Powder ½ teaspoon
6.    Salt as per taste
7.    Oil 4 tablespoon
8.    Bamboo Shoots Juice 20 ml
9.    Sesame Seeds paste 2 tablespoons

PREPARATION
1.    First lightly roast your sesame seeds on a low flame for 2 to 3 minutes and pound into a fine paste.
2.    Heat oil in a pan, once hot add your onion paste, ginger garlic paste and slit green chilies - stir them well and cook it until the oil begins to separate and the onions are cooked
3.    Add the chicken pieces, turmeric powder and salt – stir and open cook it for 5 mins.
4.    Now add your sesame seeds paste - stir, open cook it on a low flame for 15 to 20 minutes occasionally stir in between.
5.    Add 2 cups of water still cover and cook it for 20 to 30 minutes on a medium flame until the meat is tender.
6.    finally add your bamboo shoots juice - stir open cook it until the gravy thickens and coats the back of your ladle.

P.S. You can a teaspoon of lemon juice if you don’t have bamboo shoot juice.
