North East Indian Vegan dish - Pumpkin leaves with Jackfruit seeds
Jackfruit seeds with pumpkin leaves is a traditional Assamese style side dish. The recipe is super simple and you might be wondering that why are eating this discarded ingredients but no my friend, I’m going to show you how to prepare this delicious super food by combining them.
Fresh Pumpkin Leaves grown at home
Pumpkin leaves are super food, delicious and nutritious to balance them we have the jackfruit seeds, which adds a sweetness and this definitely makes up to an exotic side dish. The recipe is easy to make and very popular in rural areas. Since we do not get pumpkin leaves in Bangalore, I decided to row my own at my balcony garden. Cleaned Jackfruit seeds
INGREDIENTS
1.    Jackfruit seeds 1cup or 20 seeds skinned & sliced
2.    Pumpkin leaves 4 cups chopped
3.    Khar 2 teaspoons or cooking soda 1/3rd teaspoon
4.    Salt as per taste
5.    Turmeric powder ¼ teaspoon
6.    Oil 2 tablespoons
7.    Green chilies 2 slit (optional)

PREPARATION
1.    Heat oil in a pan, once hot add the cleaned jackfruit seeds, salt as per taste and turmeric powder - stir and cook it for 10 minutes on a low flame until the seeds turns golden.
2.    Add you slit green chilies and chopped pumpkin leaves - stir and cook them until the leaves are flaccid.
3.    Add the khar or cooking soda – stir and cook it for a minute.
4.    Add 2 cups of water, open cook it for 20 minutes or until the jackfruit seeds are completely cooked.
