North East Indian Vegan dish - Pumpkin leaves with Jackfruit seeds |
Fresh Pumpkin Leaves grown at home |

Jackfruit seeds 1cup
or 20 seeds skinned & sliced
2.
Pumpkin leaves 4
cups chopped
3.
Khar 2 teaspoons
or cooking soda 1/3rd teaspoon
4.
Salt as per taste
5.
Turmeric powder ¼
teaspoon
6.
Oil 2 tablespoons
7.
Green chilies 2 slit
(optional)
PREPARATION
1.
Heat oil in a
pan, once hot add the cleaned jackfruit seeds, salt as per taste and turmeric
powder - stir and cook it for 10 minutes on a low flame until the seeds turns
golden.
2.
Add you slit
green chilies and chopped pumpkin leaves - stir and cook them until the leaves
are flaccid.
3.
Add the khar or
cooking soda – stir and cook it for a minute.
4.
Add 2 cups of
water, open cook it for 20 minutes or until the jackfruit seeds are completely
cooked.
