Chicken with Potato
This simple chicken curry is probably the most favourite in Eastern India and it’s like the staple non-vegetarian only curry that is generally served at dinner, small restaurants, weddings, Sunday afternoons, picnics, etc. I can go on naming. So, you will always meet this half-mashed potato with chicken during your visits in this part the country.

The dish is not over spiced but mildly hot. Goes well on a hot summer day with lesser spices and during the winter, spice it up! The dish is comforting and can be served with rice and any kind of flat breads, even a bread loaf. The dish is also cost saving and tricky when people serve 2 chicken pieces with 3 same sized of potatoes.

INGREDIENTS

  • ½ kg Chicken medium pieces
  • 3medium sized potatoes, chopped to 8 halves
  • Salt to taste
  • 1/2tsp Turmeric
  • 1tsp ginger- garlic paste
  • 5 green chilies
  • 3tsp cumin powder
  • 2tbs Oil






PREPARATION

1.         In a deep pan, heat the oil and then fry the potatoes until golden brown on a high flame and take them off the pan.

2.        In the same pan, add the onions and chilies and fry until brown.

3.        Add the chicken with the remaining ingredients and fry until the water from the chicken is completely dry.

4.        Now add the potatoes and water and cover with lid to boil the chicken.

5.        Once boiled, mash some of the potatoes to get the desired consistency.
