Lemon Rice with Chicken Kebabs
This tasty and simple way of twisting regular plain rice without much hard work. Exceptionally good for hot weather, can be served hot or cold without much effort of cooking extra dishes to go with it. However, I like it with some kebabs and tempuras. The mildly tangy rice goes well with the kebabs, which when eaten does not need much effort to feel the crispy and mushy feel simultaneously. For the kebabs, a squeezed lemon is almost mandatory things to do while eaten as a starter, so when mixed together it serves as a simple and easy main course. Enjoy the merge!

For the Lemon Rice

INGREDIENTS
·         10tsp Lemon juice
·         Salt to taste
·         1bowl Plain cooked rice
·         ¼ tsp Mustard seeds
·         3tsp Oil
·         Pinch of Turmeric
·         1sprig Curry leaves
·         2 Green chilies slit
·         Handful of Peanuts
·         1 small onions finely chopped
·         1/3 inch of Ginger juliennes

PREPARATION
1.    In a pan, heat the oil and temper it with mustard seeds, curry leaves and peanuts.
2.    Once it stops splattering, add the turmeric, salt, onions, chilies, ginger and lemon juice and fry until the lightly brown.
3.    Add the rice and stir for 3mins. It’s now ready to be plated.

For The Kebab

INGREDIENTS
·         300g Chicken chopped into small pieces
·         Salt to taste
·         ¼ tsp Turmeric
·         1/3tsp Ginger-garlic paste
·         1/2tsp Garam Masala
·         1/3tsp Cumin powder
·         ½ tsp Fennel seeds
·         2tsp corn flour
·         ¼ tsp red chili powder
·         1 beaten Egg
·         1tsp curd

PREPARATION
1.    Mix all the ingredients, except the oil, in a bowl and marinate at least for 1hour.
2.    In deep pan heat oil for deep frying, add the chicken pieces one by one and fry until cooked on both sides on a medium flame. It should take about 10-15mins.

Now plate the rice and the kebabs for a wonderful main course. Garnish with salads to go along.
