Prawns with Pumpkin
Although we might be far from the shore, we have our mighty Lohit or Brahmaputra got that covered for us especially during the summer, you will be able to buy jumbo prawns and shrimps. Prawns with Pumpkin is an aromatic and delicious dish, which is quite popular in Northeast India which is enjoyed among the plain tribes of the region. The recipe is a Bodo tribe style, which is easy to make, wholesome and tasty, I love the humble marriage of the prawns and pumpkin which is well balanced by the green chilies and cumin seeds.

INGREDIENTS
1.    Prawns 250 gms de-veined
2.    Pumpkin 250 gms chopped into small chunks
3.    Onions 1 medium sliced
4.    Green chili 4 to 5 slit
5.    Salt as per taste
6.    Oil 4 tablespoons
7.    Turmeric powder 1½ teaspoon
8.    Cumin seeds ½ teaspoon
9.    Fresh coriander leaves for garnishing

Ingredients for Prawns with Pumpkin
PREPARATION
1.    First marinate your prawns with 1 tsp turmeric powder and keep aside.
2.    Heat oil in a pan, add your marinated prawns and lightly fry them on a medium flame until golden on both sides, which should take about 4 to 5 mins. Take them off the pan and keep aside.
3.    In the same pan, add your cumin seeds and let it splutter. Then add your sliced onions and slit green chilies and fry them until brown.
4.    Add your chopped pumpkin, turmeric powder and salt as per taste – stir, cover and cook it on a low flame for 20 mins occasionally stirring in between.
5.    Now open cook it on a medium flame until the water has completely dried and the pumpkin completely disintegrates. This should take about 5 to 10 minutes.
6.    Add ½ liter water and bring it to a boil. Stir continuously so that you get a smooth texture to the gravy.
7.     Now add your fried prawns and let it cook for 3 to 4 mins.
8.    Finally garnish with finely chopped coriander leaves, give it a gentle stir and your dish is ready to be served.
