Chimp Achin - a Lunch Box recipe from North East India |
Chimp achin
is a traditional lunch box recipe from Arunachal Pradesh where the farmers
would take it to the fields or while travelling. The dish is simple and
prepared with chicken, lai xaak, bamboo shoots with condiments; then they are
wrapped in a special leaf called Akum, which lends a beautiful flavour along
with rice. The lunch is delicious and healthy. It's hard to wait for lunch when
you know what is waiting for you.
INGREDIENTS
1.
Chicken 300 grams
large pieces
2.
Mustard greens
200 grams rinsed
3.
Salt as per taste
4.
Fresh bamboo
shoots 50grams
5.
Green greens 4-5
slit
6.
Garlic 5-6 cloves
crushed
7.
Akum leaves for
wrapping the dish (Optional)

PREPARATION
1.
Take 2cups of
water in a large pot and bring it to boil.
2.
Add your chicken
pieces, crushed garlic cloves, slit green chilies and salt as per taste - stir,
cover and cook it for 20 minutes on a medium flame.
3.
Add your freshly
chopped bamboo shoots, cover and cook it for 10 minutes.
4.
Now add your
mustard green, gently stir, cover and cook for 2 to 3 minutes on a low flame,
then turn off the stove and let it rest for 10minutes. This will allow the
leaves to cook.
5.
Finally place
your rinsed Akum leaves or lunch box, put your cooked steamed rice, followed by
the chicken pieces and heaps of vegetable stew. Wrap the leaves or cover the
box with lid.
