Arsa Biepenek is a spicy
chicken dish of Hmar tribe of Mizoram. The dish is awesomely delicious and flavoured
with Bird’s eye chilies, which significantly changes the entire taste of an
otherwise humble dish. The specialty of the dish is that although it’s not
spicy; its hot and the gravy is thickened with rice flour. This recipe is a must
try North East Indian dish and I am sure you will love it too.

INGREDIENTS
1.
Chicken 350 grams
2.
Rice flour 1
tablespoon
3.
Salt as per taste
4.
Bird’s eye chilies
15 to 20
5.
Turmeric powder ½
teaspoon
6.
Garlic 4 to 7 cloves
7.
Ginger 1 inch julienne
8.
Oil 4 tablespoon
9.
Khar 3tbs or
cooking soda ½ tsp
10.Onions
2 small sliced
11.Coriander
leaves freshly chopped for garnishing
PREPARATION
1.
First marinate
the chicken pieces with onions, ginger, garlic and turmeric powder for 30 minutes.

Heat oil in a pan,
then add your marinated chicken - Stir and cook it for 15 to 20 minutes on
medium flame. Stir occasionally and let the water from the meat completely dry.
3.
Add 2 cups of
water, salt as per taste and bird’s eye chilies- Gently stir, cover and cook it for 10 to 15
minutes.
4.
In the meantime, mix
your rice flour with water – ensure that there are no lump.
5.
Add the rice
flour paste into the pan and stir, cook it for 5 minutes or until the gravy
achieves a consistency of your choice.
6.
Finally garnish
the dish with finely chopped coriander leaves and give a quick stir and its
ready to be served with some hot steamed rice.
