Ki Baa | Smoked Pork Salad | Naga Recipe

Naga style smoked pork salad
Ki Baa or smoked pork with kidney beans salad is a traditional recipe of the Khiamniungan tribe from Nagaland. Are you surprised?? Kidney beans or Kholar as locally known has lot of recipes in Nagaland and do try out this healthy smoked pork recipe which is incredibly delicious and quick to make.

INGREDIENTS
1.    Pork 250 grams
2.    Kholar beans 100 grams
3.    Ginger 1inch pounded into a rough paste
4.    Green chili 5 to 6 finely chopped
5.    Salt as per taste
6.    Coriander leaves finely chopped for garnishing

PREPARATION
1.    First soak your kholar beans overnight in water. Then boil the beans with ½ teaspoon of salt and water in a pressure cooker for up to 5 whistles. Once cool, drain the water and keep aside.
2.    Take a pan, add your smoked pork pieces and a pinch of salt – stir and cook it on a low flame until the meat is cooked and the fat starts releasing. Once done, transfer it into a large bowl.
3.    In your meat bowl, add your boiled beans, ginger, green chilies, coriander leaves and adjust the salt. Mix them well and our Ki Baa is ready!

P.S. You can replace kholar beans with regular kidney beans available.
