Wak Chambil / Pork with Citus Macroptera
This is a traditional Garo style pork recipe known as Wak Chambil, where the pork is prepared with Citrus Macroptera. This citrus fruit is locally known as Chambil in Garo language and is relished during autumn and early winters. The flavour from the dish is to die for and it’s superlatively inviting. The pork is ultra-tender and as you dig into the juices of the tangy fruit, which has beautiful lingering fragrance. The flavours are perfectly blended literally making you want to dance as you eat. INGREDIENTS
1.    Pork 500 gms
2.    Citrus macroptera ½ fruit
3.    Green chilies 5 to 10 slit
4.    Salt as taste
5.    Ginger 1 ½ teaspoon pounded
6.    Garlic 2 teaspoon pounded
7.    Onion 2 medium slice
Citrus Marcoptera
PREPARATION
1.    First add your pork pieces and salt as per taste in a heavy bottomed pan, stir them well - cover and cook it for 30 to 40 minutes occasionally stirring in between on a low flame until the fat from the meat starts releasing and turns slightly golden.
2.    Now add your sliced onions, slit green chilies, ginger and garlic paste – stir, cover and cook it until the onions are completely cooked.
3.    Splash water in between and keep stirring it until the meat is tender. Repeat this step of splashing water as many times as required.
4.    First rinse your Citrus Macroptera then grate the zest and ensure you don’t go deep i.e. the white skin of the fruit as it and keep aside.
5.    Now cut the fruit into half and remove the seeds otherwise it will give an unpleasant bitter taste. Squeeze the juice directly into your pan and let it cook further for 10 minutes.
6.    Finally add your chambil zest and cook them together for not more than 5 minutes.
